BAKING – Pistachio Cupcakes

It’s been a little while since I shared one of my recipes, so I’ve been going through my past bakes and found a few that haven’t made it onto the blog yet. I’m not a massive cupcake fan myself, but I absolutely love baking them. One type of cupcake I really enjoy eating as well as making are these pistachio cupcakes. Just sweet enough, with a lovely nutty flavour.

You will Need: 

120g self raising flour 

50g pistachios ground 

170s caster sugar 

170d butter 

3 eggs 

½ tsp vanilla extract 

Green gel food colouring

For the frosting 

85g butter 

175g icing sugar 

1 tbsp milk 

½ tsp vanilla extract 

Green gel food colouring  

Chopped pistachios to decorate

How to Make 

  1. Preheat oven to 180ºc. Line a muffin tin with 12 cupcake cases.  
  2. Grind the pistachios until they have a fine consistency. 
  3. Add all the ingredients to a mixing bowl, making sure to add only a little food colouring. 
  4. Beat the ingredients together until fully combined.
  5. Spoon into cake cases and bake for 15-20 minutes.  
  6. Cool cakes on a wire rack.  
  7. Beat all the frosting ingredients together, adding a little food colouring at a time until the frosting has a very light green colour.  
  8. Pipe onto the cooled cupcakes and sprinkle with chopped pistachios.
