BAKING – Apple and Blackberry Crumble Muffin Recipe

With Autumn well and truly upon us, I’ve been thinking of cosy things to do indoors. One of my favourite things to do at this time of year is bake. I wanted to make something really yummy that incorporated my favourite in-season fruits and favourite flavours. I absolutely love making fruit crumbles and thought using them as inspiration to create a muffin would be absolutely delicious. At this time of year I love to pick Bramley Apples at my local pick your own farm and forage for delicious blackberries, the two fruits are so perfect for Autumn and compliment each other perfectly. These muffins are absolutely packed with fruit and go perfectly with a hot cup of tea on a cold day.

Apple and Blackberry Crumble Muffin Recipe:

You will need:

100g Bramley apple, cut into small cubes

150g Frash Blackberries

175g Caster Sugar

2 tbsp Sunflower Oil

1 Large Egg

1tsp Vanilla Extract

100ml Full Fat Nutural Yogurt

25ml Whole Milk

200g Plain Flour

1tsp Baking Powder

1tsp Bicarbonate of Soda

For the crumble topping:

50g Soft Light Brown Sugar

50g Plain Flour

25g Oats

1tsp Ground Cinnamon

50g Butter

How to Make:

  1. Pre-heat oven to 220°c / 200°c fan / gas mark 7. Line a muffin tin with 10 cases.
  2. Rub the crumble topping ingredients together with your hands until they resemble chunky bread crumbs.
  3. Stir the caster sugar, oil, egg, vanilla, yogurt and milk together. then stir in the dry ingredients.
  4. Gently fold in the fruit.
  5. Quickly spoon evenly into the cases and sprinkle with some of the crumble topping.
  6. Bake for 15 minutes, cool on a wire rack.

These come out absolutely delicious and the moist muffin and big chunks of fruit are absolutely delicious together. I’d love to try these with other seasonal fruits. Watch this space as I’d love to share another variation soon.

I’ve made a few batches of these already as my family absolutely love them and keep eating them really quickly. I managed to save a couple to take on an Autumnal walk with my mum. We enjoyed them outdoors with a thermos of tea and it was absolutely lovely. Who says picnics are just for summer!
