It’s been a while since I last shared a recipe on here, so I thought it was high time I shared a delicious recipes with you. These lovely cupcakes include two of my favourite flavours – Earl Grey tea and lemon. I had so much fun creating them and I hope you enjoy them too.
Earl Grey and Lemon Cupcake Recipe:
You will need
170g self raising flour
170g caster sugar
170g butter
3 eggs
Zest of 1 lemon
1 tbsp strongly brewed Earl Grey tea
For the frosting
100g butter
250g icing sugar
Zest of 1 lemon
2 tbsp strongly brewed Earl Grey tea
Black gel food colouring
Sugar flowers to decorate
How to Make
- Brew some very strong Earl Grey Tea and leave to steep for 15 minutes.
- Preheat oven to 180ºc. Line a muffin tin with 12 cupcake cases.
- Add all the ingredients to a mixing bowl.
- Beat the ingredients together until fully combined.
- Spoon into cake cases and bake for 15-20 minutes.
- Cool cakes on a wire rack.
- Beat all the frosting ingredients together add a little black food colouring to give the frosting a light grey colour. Put into a piping bag.
- Pipe onto the cooled cupcakes and add sugar flowers or a sprinkle of loose leaf Earl Grey tea.
