I absolutely love banana bread, it tastes amazing with a cup of tea, gets rid of old bananas and it’s really easy to make. What more could you want from a recipe? I make it all the time, as there always seems to be one or two bananas left past their best in the fruit bowl.

I thought I’d share the recipe I use with you as I’ve not done a baking post in a while. It may look a bit boring in the pictures, but this really is super tasty!…

You will need…

150g softened butter

150g soft brown sugar

2 large beaten eggs

150g self raising flour

1 tsp baking powder

2 very ripe bananas

How to make…

Preheat oven to 180 degrees (fan) and grease your loaf tin.

Mash your two bananas until smooth and place to one side.

Mix the sugar and butter together until smooth and creamy.

Slowly add the eggs to the mixture.

Sift in the flour and baking powder and fold into the mixture.

Now add your mashed bananas to the mixture.

Pour into the tin and bake for around 30 minutes.

    Yum-yum!!! Banana bread and banana muffins were absolute staples in my home growing up. I still make them fairly often (in GF form) and love tossing a handful of nuts and/or chocolate chips in for an extra sweet treat sometimes.
