One of my goals for 2019 was to get back into baking and do it for fun a bit more. I fell a little out of love with baking when I had to do it for work. I was producing recipes for magazines and it was definitely work as opposed to pleasure. So I took a little break from recipe creating and now I’m just getting back into doing it for fun. I’m especially enjoying baking stuff with the kids at the moment.
Easy Currant Cupcakes Recipe
Today I thought I’d share a really easy recipe that Lila and I tried over half term. These currant cupcakes took no time at all to make and it was a perfect recipe to make with kids, but would also be perfect for when you want to rustle up some yummy treats in a hurry.
You will need:
115g butter
115g caster sugar
2 large eggs
4tsp lemon juice
175g self raising flour
115g currants
A little milk as needed
How to Make
Preheat oven to 190ºc Line a muffin tin with 12 baking cakes.
Cream the butter and sugar together in a bowl until pale and fluffy.
Beat in the eggs, a little at a time. Add the lemon juice.
Fold in the flour and add the currants.
Add a little milk if required to get the mixture to the right constancy.
Spoon the mixture evening between the cases.
Bake for around 15 minutes until golden.
Cool on a wire rack.
These tasted excellent with a big cup of tea and would also be nice served with a little jam, a bit like a cupcake version of a scone! I’m also thinking of adding a little spice when I make these in the future. It’s a great recipe for adapting and changing according to your tastes.
