BAKING – Lemon and Poppy Seed Thins with Lemon Posset

I absolutely love baking with lemon flavours. Whether it’s cakes, desserts or biscuits the gorgeous flavour of lemon, is perfect for baking. These two recipes are some of my favourites and work beautifully served together or on their own. Both are easy to prepare and delicious to eat.

BAKING - Lemon and Poppy Seed Thins with Lemon Posset recipe

Mini Lemon Posset Recipe 

Makes 8 mini lemon possets 

Ingredients:  

300ml double cream 

75g caster sugar 

Zest and juice of 1 lemon 

Lemon curd (to serve) 

Directions: 

Add the cream and sugar to a pan and bring to the boil. 

Stir in the lemon juice and rind. 

Return to the boil and stir for 4 minutes. 

Pour the mixture through a sieve and decant into mini jam jars. 

Leave in the fridge for around 3 hours, until fully set. 

Serve with lemon and poppy seed thins and a little lemon curd, as part of an afternoon tea. 

BAKING - Lemon and Poppy Seed Thins with Lemon Posset recipe

 Mini Lemon and Poppy Seed Thins 

Makes around 20 biscuits. 

Ingredients:  

100g plain flour 

60g butter 

40g caster sugar 

Grated zest of ½ lemon 

½ tbsp poppy seeds 

Directions: 

Preheat oven to 180°c gas mark 4 prepare a greased baking tray. 

Sift the flour into a mixing bowl and stir in the lemon zest. 

Add the butter and rub into the mixture with your fingers. 

Add the sugar and poppy seeds and knead the mixture until it forms a firm dough. 

Roll out the dough to a thickness of around 3mm. 

Use a small cookie cutter to cut out the biscuits. 

Bake for 6-8 minutes, until golden.
