Today I am bringing you another festive recipe. I think a lovely basket of muffins makes a nice gift for someone special who doesn’t need a big gift. It’s something nice to enjoy and people appreciate the effort put into baking something yummy just for them. Why not arrange them in a vintage basket and decorate with ribbon, as well as looking great these taste amazing too.
You Will Need:
2 eggs
200g brown sugar
250ml whole milk
120 ml vegetable oil
400g flour
3 tsp baking powder
pinch of salt
The rind of 1 orange
A handful of fresh cranberries
Method
Preheat oven to 190 degrees
Beat eggs in a mixing bowl and add the oil, milk and sugar.
Sift in flour, baking powder and salt then mix.
Add your orange rind and cranberries to the mixture.
Spoon into muffin cases in a muffin tray. (They need to be quite full)
Bake for approx. 20 minutes.
